Super Simple Pocket Pies

My daughter has been saying “Apple pie” all week. I have no idea why, she just has. So tonight I decided I would make pocket pies with her. A pocket pie is like a turnover, but with a basic pie crust and pie filling. You can make shapes using cookie cutters or even pocket pie cutters.  A super simple dessert that’s fun to make!

Pocket Pies


  • 2 Refrigerated ready-to-roll Pie Crusts
  • Pie filling of your choice


  1. Pre-heat oven according to pie crust directions. I used Hannaford pie crusts which bake at 425 degrees
  2. Take pie crusts out of the fridge and let sit for 15 minutes so that they are easy to unroll
  3. Roll out pie crusts
  4. Cut the shapes out of the pie crust using cookie cutters or pocket pie cutters. Remember you need to cut outs for each pocket pie
  5. Put a spoonful of filling on one cut out and then top with another cut out. Using the tines of a fork push down on the edges of the pie crust to close the pocket. Once you’ve gone around the entire shape and the pocket is completely closed, cut 2 or 3 slits in the top of the pocket to vent
  6. Put in the oven and bake until golden brown – about 10 – 15 minutes.

Serving suggestion: Serve warm pocket pies with a small scoop of your favorite ice cream.

Brown Sugar Meatloaf

This is by far one of my most favorite meals to make. It’s also one of my father-in-law’s favorite meals to eat when he comes over for a visit. It is also the only meatloaf every made that my honey hasn’t used ketchup on. I love to make this recipe in the winter when it’s cold as all heck outside and my family is craving comfort food. Add real (not from a box or package) whipped mashed potatoes and you have a complete meal!


  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1/2 pound lean ground beef
  • 1 pound meatloaf mix or veal if your store does not carry the mix
  • 3/4 cup milk
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 1/4 teaspoon ground ginger
  • 3/4 cup bread crumbs


  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5×9 inch loaf pan.
  2. In a skillet on the stove place a few drops of olive oil and heat over medium heat. Add onion and bell pepper and cook until soft.
  3. While onions and peppers are cooking, press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
  4. In a mixing bowl, mix thoroughly all remaining ingredients plus cooked peppers and onions and shape into a loaf. Place on top of the ketchup.
  5. Bake in preheated oven for 1 hour or until juices are clear.

Serving suggestions: Serve with real mashed potatoes (I use the meatloaf drippings to make a gravy) and green beans.

Eating Healthy on a Budget; Hannaford Makes it Happen

“Eating healthy is so expensive.” This is one of the statements I most often hear from mothers when it comes to feeding their families. The truth is, eating healthy is not expensive if you know how to create a meal plan each week (use my worksheet) and shop the right store. My goal of this post is to help you to understand that when you plan ahead and shop Hannaford you really can feed your family healthy meals.

My goal when shopping at Hannaford is to purchase as many Hannaford brand items as I can because they have become a brand I depend on. And often, even when I have a coupon for a name brand product, the Hannaford brand item is still less expensive.

Each week I use the Hannaford circular to create my meal plan. For instance, if I know that Hannaford boneless skinless chicken breasts are going to be on sale for what I refer to as the “stock up price” ($1.99/lb) then I am going to have to make room in the freezer. I usually buy 2 packages per trip and go home to divide them up and then freeze them. And there is so much that you can do with chicken breasts!

Chicken breasts are just one of many examples of a budget friendly option you can use to feed your family.

Another helpful resource that Hannaford provides is their Guiding Stars® Program. Straight from the Hanaford website: “Guiding Stars® is an easy to use nutrition navigation system at Hannaford that helps you find foods with more nutrition by looking for special shelf tags while you shop.” I use the Guiding Stars® tags posted on products throughout the store to help me make healthier choices when selecting products. I also use the Guiding Stars® tags as a way to teach my daughter (she’s 2 years old) about how to determine which foods are good for her and which foods we can do without. You can learn more about the Guiding Stars® program on the Hannaford website.

During a week long period, I managed to feed my family six healthy dinners and made a healthy football watching dinner for my family and family friends. I picked out three of these meals as examples of how to feed your family healthy meals on a budget.

Chicken Pot Pie – serves 4
Hannaford Healthy Request Cream Of Chicken Soup – 1 can, $1.39 each

Buffalo Chicken Burgers with Blue Cheese Dressing

Buffalo Chicken Burgers with Blue Cheese Sauce – makes 4 quarter pound burgers
1 lb., Ground Chicken
1/4 cup, Hot Sauce
1 rib, Celery, finely chopped
4, Green Onions, finely chopped
1 palmful, McCormick Grill Seasoning
2 tbs, Extra Virgin Olive Oil
2 oz,  Crumbled Blue Cheese
1/2 cup, Light Sour Cream
4, Whole Grain Hamburger Buns

1. Heat Extra Virgin Olive Oil in skillet over medium heat.
2. In a large bowl, mix together ground chicken, celery, green onions and grill seasoning.
3. Score chicken mixture into 4 even parts and form 4 patties. Place heated skillet and cook thoroughly; 4-6 minutes on each side depending on thickness of patties.
4. While burgers are cooking you can make the dressing. Combine sour cream and blue cheese crumbles in a bowl to make the dressing.
5. Once burgers are cooked remove from pan and place on a plate. Add hot sauce to pan and then dredge burgers through the sauce to coat well.
6. Place burgers on buns and cover with dressing. Serve with Hannaford Onion Rings on the side.
